Cauliflower Bread

Everyone right now is on a huge health kick until maybe March or so... and then people start giving up on their new years resolutions etc. Well a lot of people are giving up carb's and breads or whatever, but this is a good substitute and pretty tasty! Just make sure not to over cook it!!

I found this one on pinterest and it brought me to this blog called Fat Girl Stuck in a Skinny Body. She actually makes this bread into a pizza which isn't such a bad idea but I just added as a flat bread to the meal that we had. The recipe calls for basel but I used about 2 Tbs of dried Rosemary instead... and it made it delicious! You can use any herb you want, just make sure to measure accordingly if it is fresh or dried.

Cauliflower Crust
Makes 4 individual Pieces 
2 eggs
2 cups mozzarella cheese
2 cups riced cauliflower (grate the cauliflower on a cheese grater)
2 garlic cloves, minced
1/4 cup fresh julienned basil

Preheat oven to 450 degrees.
Line a cookie sheet with parchment paper, spray with non-stick spray.
In a medium bowl, combine riced cauliflower, basil, eggs and mozzarella. Divide into 4 amounts and press evenly on the parchment paper.

Bake the crusts at 450 degrees for 12-15 minutes.
