Cauliflower Bread

Everyone right now is on a huge health kick until maybe March or so... and then people start giving up on their new years resolutions etc. Well a lot of people are giving up carb's and breads or whatever, but this is a good substitute and pretty tasty! Just make sure not to over cook it!!

I found this one on pinterest and it brought me to this blog called Fat Girl Stuck in a Skinny Body. She actually makes this bread into a pizza which isn't such a bad idea but I just added as a flat bread to the meal that we had. The recipe calls for basel but I used about 2 Tbs of dried Rosemary instead... and it made it delicious! You can use any herb you want, just make sure to measure accordingly if it is fresh or dried.

Cauliflower Crust
Makes 4 individual Pieces 
2 eggs
2 cups mozzarella cheese
2 cups riced cauliflower (grate the cauliflower on a cheese grater)
2 garlic cloves, minced
1/4 cup fresh julienned basil

Preheat oven to 450 degrees.
Line a cookie sheet with parchment paper, spray with non-stick spray.
In a medium bowl, combine riced cauliflower, basil, eggs and mozzarella. Divide into 4 amounts and press evenly on the parchment paper.

Bake the crusts at 450 degrees for 12-15 minutes.

Crock Pot Teriyaki Chicken

I love all kinds of food but Mexican and Asian foods are one of my favorites!! I haven't always been able to cook these favorites of mine... and sometimes I like to just leave these things up to the experts! But feeling adventurous I attempted a homemade Teriyaki. Now we have made teriyaki chicken before using a pre-made marinade, which is pretty good in itself, however never that Asian restaurant style taste. This was the first time that I have gotten the restaurant taste from a home cooked meal.

I only used two chicken breast and I chopped them into thin slices, I wanted to do this because I only have a small crock pot and I wanted the teriyaki taste in every bite!! I also added broiled broccoli to the sauce which made it delicious. Since I only used two chicken breast I also halved the recipe, it still needs the 4 hours though.  

I got this recipe from the Lake Lure Cottage Kitchen blog, and I am so glad I gave it a try!! Instead of cider vinegar, I used regular white vinegar. Otherwise follow this recipe and you wont be lead astray. 

Crock Pot Teriyaki Chicken 

12 boneless skinless chicken thighs (about 3 pounds)
Mine
3/4 cup sugar
3/4 cup low-sodium soy sauce
6 tablespoons cider vinegar
3/4 teaspoon ground ginger
3/4 teaspoon minced garlic
1/4 teaspoon pepper
4 1/2 teaspoons cornstarch
4 1/2 teaspoons cold water
Hot cooked long grain rice
Place chicken in a 4 qt. slow cooker.  In a large bowl, combine the sugar, soy sauce, cider vinegar, ginger, garlic and pepper.  Pour over chicken.  Cover and cook on low for 4 to 5 hours or until chicken is tender.  Remove chicken to a serving platter; keep warm.  Skim fat from cooking liquid.  Place liquid in a saucepan and bring to a boil.  Combine cornstarch and water until smooth.  Gradually stir into liquid and stir until sauce is thicken.  Serve with chicken and rice.

Breakfast To Go

I saw a recipe similar to this one, but I have lost the pin and haven't been able to find another one like it. I really enjoyed making these and they turned out great to re-heat. You know we always see these recipes that are “great” to reheat later, but really they turn out to be a big floppy mess!! The ingredients make about two cans worth of Pillsbury croissants, however if you roll out the dough you could make one can stretch further. I wouldn't roll it out to much, because than the dough will get to thin and not bake correctly. You should roll just enough to close the seams a stretch it out.
For the stuffing I used 6 eggs, 1 container of jimmy dean sausage, about 1 cup of cheese, 1 medium yellow onion and one green pepper. I chopped up the onion and green pepper, and mixed it in with scrambled eggs and the cooked sausage in a large bowl with the cheese.


 Once I thoroughly mixed it together, I popped out the dough and closed up the seams of the dough. And then cut out the squares added the dough and then closed it up.


 I put it in the oven for the duration of the package directions since everything else had already been cooked. After we pull them out... we put them in a freezer bag with wax paper in between each one and reheated for about 15-30 seconds in the microwave... Easy Peasy breakfast on the go!! 















You could do this with turkey sausage or even egg whites to make it a more healthier... I hope you enjoy and start your day off right!!!
